I have come across several mountable fish this year for some reason and I had an epiphiny this year.  I used my vacuum sealer with the 'cut your own' bags, and it seems to work well.  It holds the fins in and keeps the air out... if it works well for food, then why not fish?  Does this sound like a good idea or will the texture of the one side of the bags wreck the skin?

Vacuum sealed fish may be the best way to preserve your fish. NO freezerburn, fish will last years as long as the seal is not broken. No the texture will not harm the skin of the fish.

It's actually been around for a little while. I doit myself, I vacume seal 3/4's of my fish

I get in. Just make sure you don't have any fish slime near the edge to be sealed you dont want that slime getting into the machine.   Take a paper towel and whipe out the inside edge of the bag before sealing.

You can fold up a paper towel about an inch wide and write the information on the towel and seal it in the bag also. That way any fluids will get stopped before the seal and then you won't loose information about the fish.

Thanks for the replies.  Some other good ideas as well.  I would have liked to post the pictures of the fish, but my camera took too large of photos, and I don't know how to shrink the size of the file.  Thanks again
