I recently bought a used delta V fleshing machine the rotation of the blade is so its throws the flesh up and back . is this the same on all machines?

The blade should be rotating downward as you look over the top of the machine.

i agree with what rich said, if its going the oposite direction you have 2 choices, either reverse the polarity of the motor so it spins in the other direction, or you can try and put the motor on the oposite side of the machine depending on the set up.
