Here is my set of knifes that I use.
The top item is my sharpener. I don't leave home without it. I use it during all processes to restore the edge on all the knifes.
The second is a Messermister curved paring knife. I use this for all of my skinning processes except for splitting lips.
The third knife is my primary fleshing knife. It's Forschner. About a $30 to $40 knife.
The forth knife is another fleshing knife that I use on bigger animals. Again a Foschner in the $35 range.
Tip: Spend money on GOOD knifes. They are your main tools. And get a sharpener that you can EASILY use during your skinning and fleshing processes.

Same paring beak knife as Doug.
Plus a regular paring knife by the same maker, a #11 havel scalpel and a #22 havel scalpel.
I also have a flushing knife I made myself from another knife that works really good on certain animals.

They come on fleshing machines. I use knives to butcher, field dress, and cut capes off hides. For fleshing I use a round knife.

I must admit George is right again. I finally broke down and bought a fleshing machine and I do very little by hand anymore. Best move I ever made (as far as taxidermy goes). If I do any fleshing by hand it is with the Ulu knife, but no knife works like the machine.

I use the exact same knife that is pictured above. The Forschner in the middle. I keep it razor sharp and it does all the work, all I have to do is keep it pointed in the right direction. I bought mine through hantover.com . If you do a little searching you will find them for around $20.
