Is there anyway to preserve seaweeds or any ideas on creating lifelike substitutes

I've soaked it in a glycerin solution...  But it still shrivels up a bit (not a "lot"), and it NEVER loses the smell!!  I covered it in clear casting resin and that seemed to contain the stink, but if you don't COMPLETELY encapsulate it, you WILL smell it.

You're better off buying it, or making your own (plaster mold, slip cast with latex - see the molding & casting forum).
