Good small animal to practice skinning?

Basicly, I've never attempted anything in taxidermy before. I would like to learn though, and attempt to skin, tan, and finally mount a small animal.
Which animal do you think would be the easiest for a starter? I can get rats, mice, rabbits, and several other species from reptile foods. If there's something better that you know of please do tell.
Thanks.
And just a question, how do you like the freeze dried duckling in my icon? Is the positioning good? I'm thinking of getting one for a buddy from a similar source.

I would have to agree go with a squirrel. They are cheap and they are abundant. I did a rabbit firat then a pheasant then I did a squirrel and the squirrel was so easy compared to the other two.

On the tanning part of the process, the Lutan F kit that Van Dyke's sells comes with everything you need to tan. You can get the smaller kit, and it should tan a few different small animals. Only thing you'll need for the tanning that they don't supply is non-iodized salt. Which is very cheap, and you can get it any supermarket. Any other questions, feel free to PM me. I'll answer any questions I can.
