How do you scissor a bird skin?

You can use them to trim some of the fat, but some kind of brushing is going to be needed, whether buy powered or by hand. Be careful with the scissors you will cut yourself plenty of holes. Been there done that early on.

usually in the tail area where a lot of thick fat is....go slow

I scissor the entire bird taking all of the membrane and most of the fat off.  All it takes is a little cleaning on the wheel.
I use Gingher scissors and have learned its all about positioning your scissors at the right angle to the skin relative to the feather tracts.
