i am new to the hobby and like most have some questions.  i am starting with birds (ducks) and will be doing most of the fleshing by hand.  i know the process of fleshing, washing, and degreasing.  how long after i mounted a duck will i notice any grease issues if i have not fleshed the skin good enough?  so far i have mounted about 10 birds the oldest being about 3 months and have not noticed and grease issues.

You might not notice until it gets hot. Wait for Summer. Heat will help the grease to liquify and if it's gonna leak you will see it then.

Could show up years later, depends on the amount of fat left in the bird also.
