when do u consider a hide is dry enough to roll up to ship off when salting hides?

I like to completely dry them and the tannery I use prefers them that way too.

What do you mean completely? like till they turn all white and are stiff as a board? I cant roll them up if I wait that long though.

Fold them to fit in your box before they get completely dry. Then allow them to completely dry before putting in the box and shipping.

So you are saying after they are done draining and sit for a couple days they should be good to fold up and allow to completely dry before I ship them?

Yes when they start drying but are still pliable fold them up. Then when completely dry box and ship.

Put a small fan blowing on them and they will be dry and hard in a few days
