I haven't done a weasel yet but I have a mink to do and I am going to say that yes the feet should be skun down to the toes just like any mammal should.  Some use DA (denatured alcohol), but that's not a tan (do a search for DA, lots of reading on it), and many use dry preserve (DP).

Always, always, always, skin the toes down to the claw.I believe the tutorial above was the one where he left the feet in.Bad advice.I prefer to open the ears but some don't.Nothing wrong with tanning  one.Be careful with things like liqua tan.If it gets in the hair of white ones,it could stain it.Denatured alcohol is good and is what I use on weasels,BUT,it should always be used with borax or DP.Use only clean alcohol. You can leave the weasel in a minimum of 4 hours.I usually leave them in overnight.Don't leave white weasels in a lot longer than that.If left in for several days, they will yellow. Not sure why that happens but it can.
