Has anyone ever used real cypress knees on a presentation, and if so what do I need to be wary of:  Any advice on this would be greatly appreciated.

I use them for roosting turkey limbs with no problems. I do use extra long screws (6") because the wood is fairly soft. I let them dry for a month or so before using and they lighten up drastically.
