I agree with Jrosbor. Around 5 northern, and maybe 7 southern. Keep a check on the ph. If you add acid, add salt also. Keep submerged, and stir occasionally. Dont stir just the top of the pickle, stir it all. If temps are cold in your shop, stir often, because the salt will fall out of the solution. Cut a piece of plywood, the same shape as the container, drill some holes in it, and weigh down with something like milk jugs full of water. Dont use bricks, they will cause the ph to rise.
