I know there is an assorted variety of clays on the market. Will a
regular potters clay work for the eyes, skull cap and ear butts?

I do not recommend the use of potters clay for the areas you mentioned.I use Critter Clay with excellent results.I tested various clays in our studio and found Critter Clay to have the least amount of shrinkage.
Good Luck
You can use these for ear butts and the skull. I would not use them for the eyes because of shrinkage. Many top notch taxidermist use this for there deer.
But I do agree with Todd that critter clay is the best on the market.
