I understand why people paint the inner ear of a deer, but why would someone paint the nose and the rest of the mount on a mammal mount. I would also like to know what else is done during finishing work besides painting.

The reasons are to make the mount life like. The real animal has color in the nose and around it, the eyes, feet, etc. Get reference you will see this and then you will know why you do the finish work.
