What is the way to do this? Skin and freeze (if want to use meat), freeze whole, or skin and preserve or what? Thanks.

If it's your bird and only your bird you can save the meat. When you bring it home skin it out. If you want to flesh the bird and clean it, that choice is yours. I like to wet the feathers somwhat and bag it air tight and freeze till later.
Do not use a costumer meat for your consumtion. You have no idea how they took care of it!
Best method I've found, last indefinitely, Go ahead and skin, degrease (wire wheel) wash, rinse thouroughly put in a tube or zip-lock gallon bag with water and freeze. As long as the bird is frozen totally emersed in the water he'll last indefinitely.(if all the above is done) Remove when desired, soak in mineral spirits, gasoline or whatevever you normally use, tumble and mount.
