I have been taught to use the bondo method for deer ears. I was also taught to use clay to reconstruct earbutts. Why should I use ear liners instead?

You don't have to. Use what you feel comfortable with.
Mike, I'm assuming that you're interested in making your work look better. Sure, you don't have to, but bondo ears, regardless of what many of us old hard heads would have you believe, never looks as thin or as good as an ear with the cartilage removed and an earliner inserted will. Bondo is not an adhesive and many times, especially if you use dry preserve, will disbond and drum on you.
Several alternate adhesives may work with varying degrees of efficiency, but NOTHING works like a good epoxy. I just completed an August deer using Brad Eppley earliners and Liquid Fast Set from Epo-Grip. You can see light through the ears and every blood vessel molded into the earliner is visible. Wanna bet you'll never get that with bondo?
