I have another wild turkey "?". Which is better? To split the wings on the under side, (between the joints), or to skin them down to remove the meat form the bones? I have videos of doing them both ways and was taught to split the wing on the inside. I have my own bird still to work on, so it is experiment time!

I skin them down to the elbow and then split them underneath. This allows the feathers to remain attached to the cartilage where they will stay in place for repositioning and drying. You can flesh them down to the wrist, but they are tough to rearrange if the bird is flying. From the wrist to the fingers has to be cut open. Injecting this on a turkey invites trouble later on.
