Some obscure Federal law, requires it say so if and when its IODIZED.
The law was implemented because certain medical conditions and allergic reactions can kill people eating salt WITH iodine. Any salt not prominently labeled "IODIZED" or "Iodine Added" is considered to be iodine free. Iodine was added to salt early in the last century to prevent goiter in depressed areas of the country.
If no one has answered your question yet, yes, evaporated salt will work. That is exactly what I use.
Thanks for the response guys!
