Fleshing how to books, videos

Is there a good video (prefered) or book that shows the right knives and how to flesh a hide fresh off the hoof?
What I want to learn is how to get the hide ready to be sent to a tannery. or stored in a box for later use.
I already know how to turn and split the ears, nose and lips. So what is the best way to get then meat and fat off?
