dont know what people mean when they say that. I have the cartliage out and the ears inside out what else needs to be done.

If you have removed the cartilage and have turned the ears, you have "opened the ears." It refers to separating the skin from the cartilage.
Open the ears by simply ripping the front of the ear from the back of the ear at its edges. All around the entire ear. Till you have two peices. You don't want to do that! LOL.
What you have done John, is enough. You are ready for your next step of preparing your hide.
Some people use different terms as to "opening" "splitting" the ears etc, I believe that is what could be posing your question.
You also want to ensure they are turned all the way to the edge. Take the back end of a scalpel and rub at the seam and you will be amazed how much further you can turn them.
