I would really like to learn taxidermy but I'm not sure where to start. Would it be better to start small, say a squirrel mount before trying a deer shoulder mount?

Then look thru all the catagories here. Tons and tons of info not to forget the archives at the bottom of each catagory. Your state has a taxidermy association, these are your quickest and fastest methods to learning, seminars and the competitions. How much you can learn by having the judge give you a critique on your mount!
Todd, you can't go wrong with the info you get here. I asked the same question 6 months ago and got the beginners courses for fish and birds. I'm now doing fish (and getting paid for it), small mammals and birds. Find out about any taxidermy conventions in your area and go to them, the people are the nicest you'll meet and answer any questions you have. Also, I've got loads of really good info in the forums here, these guys can answer any question you have.

I posted a message a few days ago and received great information from several people on this site. The best information was to contact your state taxidermy association. I contacted mine and will be taking a fish mounting class from one of it's members soon.
