Hello Chris,
Simply skin the head out to the base of the beak.
The wattles should be split ti the ends, both top and bottom.
Simply fill in with a bit of critter clay to prevent shrinkage and to maintain a nice fullness.Different techniques from different people. I watched Danny owens fill his in with clay at his seminar, while watching Corey Cruthers fill his in with Latex caulk. It was awsome to watch these 2 fellas work their majic on pheasants!

If I can help you in any other way, feel free to call me at (1-800)843-3320 ext.105 or e-mail me at this address.

Have a good day,

P.S. Reproduction Heads are nice to work with too. Just another option for ya.

Are you talking about a pheasant rooster or a chicken? Chickens are handled differently. Other wise your question was answered. You can add more clay to the wattles if needed thru the eye opening, with little rolls of clay. Also while pheasant is drying I like to back brush the black feathers in the wattle, it fluffs the red too.
