If your really interested in getting started in taxidermy Id consider Saftee Acid for the pickle. Its not that expensive, this I know will start you out right. The PH should be between 1 and not over 2, over 2 you could get into bacteria trouble. I use 4 or 5 gal. water, one pound of salt per gallon, and 2 ounces of saftee acid PH is 1.5 and holds real good if the cape is fleshed pretty good.Hope I answered your questions, cant help you on the vinigar part, never used it.

It is not quality but quanity

you have to use pH paper (litmus paper) as a minumal standard. Yu cannot guess and measure quanities to acheive the results. As there are to many variables. SInce you are orderin pH paper or some Acid bath Crystal also. They are going to be cheaper than the vinegar.
