I use a fleshing knife to knock off the larger hunks of meat. I'm not real great at it and choose to salt the hide first. This works well for me .give it a try. The knifes aren't expensive.Good Luck
Hi Mike, A draw knife will work but I have found that a Ulu knife works a lot better and its fast. They can be bought in some of the supply catalogs. Good luck.
I have used a draw knife for 20 years, did 65 geer with it one your working in the laudry room. Hint take the bear to the back of the lot.
Sharp knives can slice a friction fold open in less time that it takes you to anticipate it. Dull knives separate quite well. The ulu is also a must in the shop. For bears and boars, it doesn't get much better than this one side sharpened knife.
It works really good.

Are you asking about a draw knife? This will work for smaller animals, but not really for deer size and larger. Spend your money on a good fleshing knife, like the one Van Dyke sells. We find it best to not have the blade too sharp. This way you push the meat and fat from the skin with out cutting the skin. Using the fleshing knife with a large log fleshing beam, the majority of a deer cape can be fleshed within minutes. Ya you work up a sweat but that's okay!
Before the draw knife I have a OH butcher knife I ground a bevel on one side. Still use both from time to time.
