I went to the Orschelans (local feed type store) and bought a 50-pound bag of American Stockman salt. It does not look like regular salt as it has small crystals in it and is a gray color. Will this salt be okay for using with drying, pickling and tanning?

Don't be surprised if you get better results with that salt. Champion's Choice is another crude mined salt like you are describing and they both seem to have a better action on fats and oils. You may get snap, crackle, pop sounds from these salts when you add them to an acid solution.
WASCOs' looks the exact same. I hought it would be a finer quality but it wasn't. It did an excellent job. So use it.
