You could ask why your souffle "fell" in the oven and I'd ask you the same questions before I could decide what happened.
How was the speciman handled in field?
Was it taken care of immediately?
Did it look green and stink?
Did you flesh it immediately and salt the hide?
Did you monitor the ph?
What did you do PRE slippage? Maybe then you can get some answers.
