Hi All, a simple question I hope, but cant find the answer in the archives.
If I have skinned a squirrel, when going through the salting process, is it ok to put the skin in the refridgerater during the salting process or should it be done in the open air?
The reason I ask is that if you leave food uncovered in this way in the 'fridge, it dries out rapidly, so would this be beneficial during the salting process?
I should add that I am using an old 'fridge for this !
Also, when it comes to completely drying the skin until hard, should it go somewhere warm and of low humidity to dry completely, or should it be kept cool. I have in mind my bosses swimming pool which I look after, as the boiler room there is enclosed within the pool house itself, and is at a fairly constant 29 degrees Centigrade with 30 % humidity.

I would not put the squirrel in the refrigerator for the salting process. But I guess it would not do any damage to it. Sure would not speed things up though. You still have to resalt it after 24 hours. The pool house sounds like an okay place. Just keep it out of the sun during the drying process.
Thanks superpig, theres nothing in the fridge yet I might add, it was just a thought, that it might have assisted in the drying and slowing down any bacteria action etc.
