Why in the world would you leave brains or meat in any fish. In time it will rot and stink up your whole place.
The brains are cleaned out from the back of the head. Their just scraped out using any kind of tool you can get in their with. I found by using borax liberally it will help in catching the juices and aid in getting the brains out.
Also make sure you take the eyes out and remove the cheek meat. The meay goes all the way back to the pre opercle. Take your finger and press all around it you will feel and know if all the meat is gone. As for scapers I use a tool that ceramic clay sclupters use. It has different shapes on both ends and cleans this area well.
Between the nasal holes your will find a ball socket this allows the lips to swivel up to grab bait, this too should be removed. as should the meat under the tongue. You can scrape the meat until you find the hard boney plates of the anchor points to the gills. Also after removing the eyes, cut from the inside of the head down the boney substructure of the gill plate. When properly cleaned this area should be allow access to the eye sockets from the inside. Remove all meat from the esophegus and the roof of the mouth, you should have nothing but the external skin left.
By external I mean the skin you see of the live fish, when you look into its mouth and under the gill covers, and as viewed when showing off the live fish.
You must not be opening your brain cavity enough in the bass to access the brains.I have never found most fish to have many brains but they all have some.I use shears that cut threw bone or you can use a hammer and a chiseal to cut spine out and wha la the brains should be right there.I run a pressure hose of water to clean debris off skin and flush brains out it works great...Lloyd
