when people talk about freeze drying what do they mean

....is the process of drying a frozen specimen by drawing off the water with a vaccuum pump. The purpose of keeping the specimen frozen is to maintain the position without distortion and shrinkage. By lowering the pressure with the vaccuum the water molecules are boiling away. The process is called lyophilization(sp) Sorry about the spelling, I can't find it in any of my dictionaries.
