I use the chef's 120 eletric sharpener(recently purchased) for my skinning knifes. I need to buy a good sharpening steel to finish off the edge. The guestion is, should I buy ceramic, steel or what? My knife sharpening skill sux however, I must master this art! Where's a good place to find one of these and which is better 9in. or 10in. How about the flat ones? ...why aren't you calling Havel's like the rest of us and using really SHARP scalpel blades?

Lonnie, Hard to beat a scalpel for close skinning and much of the finer work but I use a knife for an awful lot of my everyday skinning and such. I keep a DMT diamond steel on my skinning table and use it probably 5 times at least every day. It freshens my edge so fast and believe me YOU can use it well-EASY! Just takes a little practice. DMT makes them all ways-round ,flat,double-sided, different sizes. I have a couple of tappered round ones but all work well. use single edge razor blades work great can get a 100 of them at home depot for approx. $5.00 a lot cheaper than scapel blades and when they get dull throw away only 5 cents a piece very economical and a money saver.
ok buddy first of all there is verry little to keeping a sharp edge on a knife as long as you practice hell my 9 year old nice can do that if you want to keep buying new blades all the time go for it but to me a good steel and a spare smooth stone is crushal
