am trying to learn fish fill method - am having a little trouble casting fish for this method - when i pose the fish for the cast i have trouble with the thin plaster pooling on the curves - can i cast the fish straight and then adjust with filler in fish?

Your plaster may be too thin. Try lading it onto the fish beginning at the sides (top and bottom) and continuing up to the lateral line. Do this by spooning out the plaster, rather than pouring it. Beginning at the edges of the cast and adding to the lateral line or the highest point will let the plaster rise while pushing the aid out in front of the bead.
No one says it has to be done in one pour, either. You can mix enough plaster to cover the fish with a 1/4 inch or so, and then follow that with a thicker application from a second batch. Wait until the surface of the first pour dulls a bit before adding the second.
You may be mixing the plaster too thin. It should be a bit heavier than heavy cream when it is mixed. A spoonful should sit in place when poured onto a flat surface and not run or pool.
Good luck
