when you enter the show do you bring the mount or do you do it there i am a beginner and was just wandering

Do it at home and have it finished ready to go. You may want to check out your states taxidermy assoc. Many states are now having some of the hands on workshops. Where you do a mount under the guidence of someone thats accomplished in that field.
Look very close at your reference photos. cut a smaller round hole in a piece of white cardboard and look at just the exposed area in the photos. You will see a lot more detail this way.
