Can someone explain how to correctly carve/drill out the ear slot at the earliner/manikin juncture for using earliners with the full ear canal. How deep, etc.

We have no idea on what earliners your using Fabric Form or Eplley's. But I'm going to take a guess and say it's Brad's earliners. Also what forms are you using. All of this makes a difference in what you need to do.
The best suggestion is get some ear reference to help determine those steps. Some forms you may need to drill about an 1/2 in deep and from there clay in the butts other form have a deeper ear canal made into their form and you may need to drill nothing out.
The bit I use is 1 3/8 and drill in 1/2 inch place some clay into the hole and press in the ear butt and clay them in from there.
Others lay the whole ear butt onto the skin and can shape the ear butt from there and then place it onto the form.
As you can see there are many different ways here. You need reference to see and find out what's the best way for you to do this. If you can get a road kill deer save the head in the freezer and then take it out to see how the ear should be. Also there are casts out there that show you on what a deer's ear should be and you can see how it shaped and get the depth of how it should be set but all is not really set in stone.
Measure the length of the ear butt before you skin it and then adjust accordingly
