I've been thinking of trying taxidermy as a hobby for my own mounts, mostly fish. How would be the best way to get started without spending too much or having to take a course.

If you don't want to spend the money on a taxidermy course. There is a whole lot of books, like the Breakthough manuals which cover all aspects of taxidermy, plus there are thousand of videos which cover anything you want to know. Get a hold of the many catalogs that are on the market, and order from those. Order a WASCO catalog which will be a good start.
