Sure buy all the deer capes you can and mount them up?Has far as fleshers go they require a lot of practise to get good at it,maybe go the hand route a few times.many people have learned to swear behind a fleshing machine.
Seth,
I was a fleshing knife in the Jonas Catalog No. 110 (latest one with the leopard and antelope on the cover) for less than $20.00 . Try going to www.Jonastaxidermy.com and ordering item # 8-8521.
I am not sure how good a knife it is, but at least it is inexpensive and if you don't like fleshing, you haven't spent too much to learn. Remember you can always upgrade to better equipment as finances dictate. As far as a fleshing beam, just use a piece of presure treated 2 x 8 and round off the edges pretty good for now. Hope this helps you.
