Before I bugger up my turkey, I need to get clarification. I watched the Joe Ferebee Turkey Video and he inverted the wings and removed the bones. I plan to keep the bones in and from what I have read in the archives, I should not invert the wings. Question is: Do I need to invert the wings down to where the radius and ulns start and then make my incision to remove the meat from them? Or, should I not invert the wings at all? Thanks!

What I do is skin down to the elbow and take the meat off then I make an incision between what your calling the ulna and radius remove the meat and fill it with small portions of necking material or what ever you wish and sow it back up. Make sure you make your incision so the feathers will help hide it. hope this helps and good luck
JP, I invert if doing a flying pose. All other positions I split as Fritz said. I do not sew up the incision at all if it doesn't show- you can't see it, why sew it? Enjoy, Aaron H.
