Pickle PH keeps rising

I have had an Elk cape in a Pickle / acid bath for 2 weeks now.
I started with fairly stong salt strength of 200 gpl and a PH of 2.0. But 3 times now (Every 5 days)I have found the PH at about 5.0 and had to add more acid. Is this normal ?
I don't seem to have to adjust the PH as much with my deer. MAybe one time.

yes, its normal for the pH to climb.

That happens sometimes. Check it often.

Are you using anything to keep it submerged? Like Rocks, Bricks or any other materials? Even wood with nails in it? Pickles leach out these materials and it will definitely raise the PH!

When you skinned it out - did you rub Borax or DP on it so you could get a grip? That will definitely make it go up!

Did you use a clean container - or did it have something in it before you used it? The left-overs can cause problems!
