need help with salting table

I am making a new salting rack this week (bigger), and wanted to know if anyone could give me a good reason not to use stainles steel mesh for the surface. I have this readily available through work, but I have never seen a table made of any thing but wood. Any input would be greatly appreciated.

Wood is uneffected by salt. Stainless steel isn't impermeable to the long term effects of salt. If it was, don't you imagine that every ship in the world would be made of stainless steel? For your lifetime, however, stainless will probably be a good choice.

Something to remember , never scratch stainless steel with mild steel or anchor with mild steel , it will rust in a matter of days


plastic crates

I use 6 or 8 plastic crates upside down with a few layers of old news papers underneath to catch drippings.When you are done salting,hose off with water & stack.Takes very little space.Got this suggestion from Bruce Rittel,works for me.
