Johny,
Wait until you are ready to do any clay work. It will harden within hours and not produce satisfactory results.
Have Fun,

Well you can...

... Mist the clay with a little water, then tie a garbage bag tightly around the head. With a bag over the head, the moisture won't evaporate and the clay can stay moist for days.

I've clayed my eyes many times the night before even two days prior to mounting, just keep a damp cloth over them and even throw a garbage bag over that and pin it tight in about 4 places enjoy!

Just do 'em before you put the cape on, youre not saving any time really. Claying eyes doesnt take long enough to save time.

Piece of Saran Wrap

A piece of Saran Wrap works well, too. Just mist the eyes with water, tear off a piece the width of the wrap, and down about 6 inches. Place across both eyes, gently touch to clay to adhere, gather at edges where necessary and pin.

I've even left the plastic on while mounting, to protect the eyes when sliding the hide over the head. You may use this method on bobcats, etc. Once the head is on there, I leave the plastic on there until I'm ready to mount the head, then gently slide it out through the mouth. Works great!
