when skinning a salmon how do you keep the scales from falling out?as soon as you touch the fish they always seem to come out easily.

Don't even bother trying to salvage them. Scale these types of fish with water pressure (hose) and/or your fingernails if need be to get them all off BEFORE skinning (it's easier). Then mount and paint as usual...
