What is the best method of dispatching (killing)a fish without damage with the idea of having it mounted,

its a cold water fish, (trout, salmon) just bash it across the top of the head with a heavy stick or rock,
after all you will, or should use an artificial replacement head as there is to much grease in the real heads for them to be used successfully with out a lot of re-building and fleshing and degreasing and....
Just wrap it and stick it in the freezer.
dont wrap it in a piece of newspaper. I have found out the hard way that if a customer does that the ink will come off of the paper and go into the fishes skin.
Get on the radio and say fish #1 go to Coneaut Creak. fish#2 head for the bubble for a pick up. Fish #3 cruse the rapids of Rocky River. It only takes a few minutes and I have them all dispatched
Tide works very well and very quickly. Just place your fish into one of those rubbermaid tubs or something of that nature with some water and pour a bunch of Tide detergent in there. This works really well if you want to make an accurate study cast,reproduction or pattern. You want to have all of your molding or patterning materials ready so that you can mold the fish or make accurate pattern before the musculature starts to relax, sag and distort.
