I am learning taxidermy and my "real" taxidermist was kind enough to give me back a fox, racoon and a bobcat that I had given him to mount for me. He had already skinned them out (I paid him for it) and he told me they were ready to mount. When I got them home, none of the feet were skinned out. I will skin even a squirill down to its toenails, but he doesnt. Am I doing unnessesary work, or is he short cutting?

You need to fleash to the nails. Your Taxidermist friend must do some real beuties from time to time!
