real bird sculls and fallow fawn skin

Hi I use to do taxidermy years ago But I have read in a few book that you should remove the scull to clean it.I know you can use a artificial one but if using the real on is this something that should be done.AlsoI have fallow deer skin from a fawn.I have not found any forms out their for it.Can a white tail fawn form be used.Thanks for your help ohn
