Turkey fan.

A friend brought me a turkey tail fan that was in the freezer for a year. I thawed it out. About a dozen little dried, black maggots fell out of it onto my work table. I rubbed borax onto the skin like I have in the past to dry it. It has not dried yet and it has been four weeks. It is not wet, but not dry either. Make any sense? It's dry, but not hard (about like a dry sponge). Could it have been freezer burned or freeze dried. Like I said, it's dry, but soft and pliable instead of hard. Any thoughts?

sounds like the fat was never completely removed

it sounds to me like the fat around the base of the quills was not completely removed. try soaking in Dawn, lysol and water to rehydrate, then remove all fat. Wash again and soak in Coleman gas (outside) to degrease and displace the water. Blow dry with compressed air or a hair dryer on low heat and spread the fan and bondo the quills to hold in place.
