How do you butcher a snapping turtle?

I just shot a snapper and promised my son we'd butcher it and save the shell for nature talks etc. What's the best way to get the turtle out of his/her shell?

I always cut off the feet and head first. The I nail their tail to a tree so that they are hanging upside down with their belly facing out. Take a knife and seperate the belly plate from the main shell. Pull it off and remove the guts.from their it should be pretty self explanitory. Skinn out the quarters including the neck. clean out the shell and enjoy!
