This is my first turkey, (Hunting wise and Taxidermy wise) and I have skinned the head up to the beak, removed the neck, eyes, tongue, can this still be freeze dried and used?

You either send it off like it is or go ahead and mount the head on a freeze dry insert. If you mount it on a FD insert, freeze the head so that it doesn't dry and shrink. Send the mounted, frozen head to your favorite freeze dry company.
