It's all really up to you and what you like to use. You can go through all the supply catalogs, and they all have decent knives. I found most of the knive sold through these catalogs can be purchased locally. And you want to look for a knife with good steel that will hold a good edge. I myself perfer my knive to have steel blade from Germany, And perferrably stamped Solingen Germany on the blade. I also have a few paring knives I bought at garage sales that do a great job.

I use these on all my skinning and fleshing and turning. There is simply no other knife yet I have found that sharpens as easy on a paper wheel then these do. And they are razor sharp. Jack F

Rapella Fillet Knife gets my vote.

Rapella make an inexpensive 6" fillet that is EASY to sharpen with a little diamond steele. I like the little knife a lot though I use a scalpel and a variety of larger knives as well. The answer to the question does not have a simple answer. Enjoy, Aaron H.
