I was wondering if once you skin out a fish or deer head and have them in your freezer, just the skins, if the dnr counts them as your limit even though youve eaten the fish already

Our opinions don't mean a danged thing. Especially since you didn't tell us what state or province you were in. Regardless, the ONLY answer you should take seriously, is "Call your DNR and ask them".
When it comes to legal matters such as this, they are the ones to ask, not us. No matter what responses you get here, double check with the DNR.
You should get your info directly from DNR. If someone on the internet gives you the wrong info, it is still you that is going to get into trouble. If you don't have time to call them, most state offices now have websites. Try e-mailing them.
I would contact your state's fish & game commission. The rules & definitions of terms may be different from state to state. Our state has "field" limits and "possession" limits and the in the possession limits you can't "possess" green pelts for more than 10 days after the season ends, unless your licensed to do so. They may also have limits on how long you can possess game meat after the season ends.
Hi bill, Here in Wisconsin, the critter is still considered your bag limit until it is eaten or has been given away. The skin will not count against your daily or total bag limit.
