Freeze Dry

I keep reading about freeze drying turkey heads. When you freeze dry, do you skin it back to the beak and clean out the skull,etc., or do you just whack it off at the neck and send it off? I couldn't find an answer in the archives

cut at the edge of the neck feathers, place in a ziplock baggie with enough water to cover the head and freeze it, wrap up in something to help it stay cold and send it next day or second day to you're favorite freeze dryer company.

filling the zip-lok with water check with the company that will be doing it for you some dont want it in water and some will.
