Fish Gills

I would like to know how to save fish gills and reuse them when i mount the fish?

you dont have to cut out the gills on fish unless it is salmon or trout or bluegills, because you would have those fish with closed gill cover

If you leave the gills on the fish don't they get grease in time after being mounted?
