I am doing a full mount coyote for the first time.
Is tanning the hide better then dry preserving it?

You can go right ahead and "dp". Done it 100's of time's, on coyote and smaller.
<- Why not check the orange button for all the "bloodshed" on DP vs. tanning.

I have used bondo with all of my deer head mounts,I did not remove the cartridge, but would like to try using plastic ear liners, should the ear cartridge be removed?
Thanks

It's called cartilage, and yes

When using liners carefully remove the cartilage before installing the earliner. You can compare the real cartilage with the earliner to determine the correct size on the liner before you put in in the ear.
